Developing a Fruit-Based Nutrient Bar

U.S. obesity rates related to poor diets are a major health issue, with one in three adults considered obese.

ARS scientists, in collaboration with the Children's Hospital Oakland Research Institute in Oakland, CA, have developed a low-calorie, fruit-based snack bar fortified with micronutrients, fiber, and other healthy components that are lacking in a typical U.S. diet.

In a clinical study, subjects ate two bars daily for 8 weeks without other changes in diet or exercise. Study results showed healthy changes in cardiovascular health, insulin resistance, inflammation, and obesity.

ARS has applied for a patent for this fruit-based snack bar.
